St. Patrick’s Day Fun

Happy St. Patrick’s Day! This year I’m trying to celebrate a few more holidays with my kiddos to create a few more fun moments in our daily life. So for St. Patrick’s Day today I playfully pinched my kids when I got up to encourage them to wear something green! They’re enjoying the fun. I made some green chocolate chip banana muffins that turned out really great. Click the link for the recipe! I did sub the sugar with a monk fruit erythritol sweetener and used a gluten free flour blend from King Arthur flour. My kids ate them up, and you don’t even notice the veggies! I really liked turning them green with something healthy.

I’m also cooking corned beef for the first time. It’s in the crockpot, and seems pretty simple to make, so we’ll see! I don’t plan to add the cabbage because I’m quite sure that won’t go over very well with my family, but I’ll probably add some potatoes. I’ll roast some asparagus to add something green and maybe add some green grapes for more green! I also printed off a cute little shamrock craft to make. (Here’s a bunch more craft ideas.) My teen son probably won’t get too much of a kick out of it, but I might be able to convince him to join us… we’ll see! During lunch, we’re going to watch the Torchlighter’s movie about St. Patrick to learn a bit more about him.
